Garde Manger Supervisor works with the culinary operations in the Garde Manger Kitchen following the standards and procedures set forth by the Executive Chef. Responsible for producing exceptional cuisine for the cold kitchen and other food and beverage outlets. This position requires the ability to work weekends, holidays, night shifts, and off site events when needed.
Job Description
Key Job Functions
- Prepare all cold food according to recipes, guidelines and standards set forth by the Executive Chef
- Keep all refrigeration, equipment, storage and working areas clean and organized to comply with health department regulations
- Properly label date all products for proper safekeeping and sanitation
- Supervise all cold food items and displays for holiday buffets, weddings and receptions
- Prepares cold items according to restaurant business and banquet function sheets
- Must be able to produce high quality buffet displays plated salads, appetizers, and hors d’oeuvres
- Produce show pieces for displays
- Build solid relationship with your Colleagues
- Treat colleagues with respect and dignity
- Other duties and responsibilities may be assigned. The employee is expected to work in other areas of the hotel when needed to assist operations to perform job duties not necessarily contained in this job description.

Qualifications and Skills
A candidate for this position must possess the following applicable knowledge, skills and abilities and be able to demonstrate and provide applicable examples to support his/her competency.
- Track record of delivering exceptional guest or client experience
- Communication skills are utilized a significant amount of time for training and safety purposes, and when interacting with guests and associates.
- Appropriate professional appearance and demeanor
- Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
- Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists
- Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form
- Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
- Ability to use knives and kitchen equipment
- Must able to organize and plan
- Complete knowledge of work in cold food preparation
Education and/or Experience
High School diploma or general education degree (GED); or at least one year related experience and/or training relevant to the position.
