Position Summary
The Food Scientist, Meat Applications is responsible for having a deep understanding of animal protein, animal protein processing, and animal protein applications. Must be able to provide in-depth technical support within the animal protein space and have deep fundamental knowledge of animal protein chemistry, microbiology, food safety and impact of various processes on finished products. Familiarity with controlling animal protein oxidation through oxidative and antioxidative strategies is a key area. The position will utilize their experience to identify and advance new initiatives, technologies, and work plans for delivering customer solutions both internal and external. The position requires a hands-on approach with working with lab equipment and pilot plant equipment necessary for creating animal protein applications.
Duties and Responsibilities
- Must have mastery with animal protein applications & prototype creation, both on the bench and in a production environment. Ability to quickly train and communicate with other application technologists on this know-how.
- Be the subject matter expert and key communicator on animal protein including biochemistry, flavor interactions, functional ingredient solutions, and current industry research.
- Build a strong network of key industry and academic partners and technical solution providers.
- Ability to work closely with our internal R&T team for best practices in analytical methods, micro testing protocols and shelf-life studies.
- Must be able to interface and communicate technical findings to key customers and internal global partners.
- Direct the development and execution of both short and long-term R&D for animal protein application projects.
Required Qualifications
- M.S. or PhD degree in Food Science or other related major with a meat focus combined with 3 years of technical experience in meat applications is strongly preferred. Will consider M.S. or PhD degree candidates in Food Science or other related majors with 3-5 years of active technical research in meat applications. Will consider B.S. degree in Food Science or other related major combined with 5+ years of technical experience in meat applications.
- Knowledge of the US food industry is a must.
- Excellent knowledge of processed meat applications; challenges and solutions.
- This position requires a detailed oriented individual with the ability to resolve complex technical problems related to flavors and functional ingredients within food systems.
- In-depth knowledge of the North America processed meats customer base is a must along with a strong network of technical solution providers.
- As with all customer-facing roles, excellent communication and interpersonal skills are essential.
- Must possess the ability to explain simple technical content.
- Must be willing and able to travel by land and by air both domestically and internationally approximately 25% of the time.
- The ability to integrate analytical and sensory data is a plus.
- Occupational Qualifier: Ability to taste and smell all types of flavors. Ability to taste and smell Meat is specifically required for this role.
