Pay Details:
The annual base salary range for this position in California is $88,000 to $110,000 per year. The starting pay for the successful candidate depends on various job-related factors, including but not limited to the candidate’s geographic location, job-related knowledge, skills, experience, education/training, internal value, peer equity, external market demands, and organizational considerations.
The Special Events Chef De Cuisine oversees an exclusive high-volume and ultra "high-end" catering events program. The ideal candidate brings extensive experience in creating themed event displays and service styles and demonstrates creativity in menu writing with a nutritionally focused lens and consideration for food allergies. Maintaining top-notch food flavor and presentation is a priority.??
Catering events may occur on-site at Honda Center or throughout our enterprise at various locations. In addition to overseeing culinary teams, the Special Events Chef De Cuisine will actively participate in menu development, event planning, and support internal and external catering events.
Flexibility is crucial for this role, as the Special Events Chef De Cuisine must adapt to last-minute schedule changes and possess strong prioritization skills to ensure seamless business operations and on-time event execution. Responsibilities also include providing exceptional hospitality, safe service of alcoholic beverages, and upholding food quality and sanitation standards. This position reports to the Vice President of Culinary & Hospitality.
Responsibilities
Lead menu and concept development, planning for approximately $4M in food and beverage revenue, focusing on special events and catering needs
Develop accurate costs, recipes, photos, and preparation lists for special events and catering
Create nutritional menus considering allergies and dietary restrictions while prioritizing flavor excellence
Review Banquet Event Orders (BEO) and collaborate with the Food and Beverage management team daily for successful business operations
Support the hiring, training, staffing, and scheduling of culinary team members
Make informed decisions in high-pressure environments, maintaining composure with VIP clientele
Ensure the safe service of all alcoholic beverages
Engage with guests and team members to guarantee exceptional hospitality
Conduct frequent walkthroughs of kitchen areas to maintain superior sanitation standards
Develop and oversee standard operating procedures
Project food, labor, and other costs based on anticipated events and revenue
Ensure proper staffing schedules for maximum productivity and efficiency
Establish daily priorities and assign production tasks for the culinary staff
Perform other responsibilities as deemed appropriate by the Vice President of Culinary & Hospitality and the Senior Management Team at Honda Center
Skills
Bachelor’s degree in a related field or equivalent experience with a minimum of 15 years of experience working in a Food & Beverage environment
High-volume banquet and special event experience preferred
Experience leading teams and inspiring people to reach their full potential
Experience with menu development and food cost management
Strong attention to detail
Experience leading large culinary teams
Excellent written and verbal communication skills
Solid organizational skills with the ability to handle multiple projects at one time
Working knowledge of basic PC applications (Microsoft Word, Excel, Outlook, etc.)
Working knowledge of time and attendance system (ABI preferred)
Working knowledge of inventory management software
Able to work a flexible schedule, including nights, weekends, and holidays
